Homemade Mayonnaise
This is a very simple and good recipe to do homemade mayonnaise. You need just 20 minutes to prepare it. Then you have to keep it in the fridge about 10 days.
Ingredients for 6/8 people: 2 yolks and 1 whole egg (yolk and white egg) fresh, 1 teaspoon Dijon mustard, olive oil, juice of 1/2 lemon, salt.
Use a high and narrow bowl and a electric mixer. Pour eggs and mustard in the bowl and mix for 2 minutes. Keeping mixing add very slowly oil until the mayonnaise becomes dense. At the end add lemon juice and salt, and mix another 1 minute with electric mixer. You can do homemade mayonnaise in about 20 minutes. This mayonnaise is perfet to prepare insalata russa.
